I am a bit confused by your analogy. Photography and painting are two different forms of art, they are two different mediums. Superiority is irrelevant. It's like saying the violin is better than the cello. The same with the Hammonds. Differences are not only by the model, but the individual organ. Every organ has its own peculiarities, its own nuances and fickleties (I know it's not a word)), in much the same fashion as classic violins and their subtleties. Paint brushes are still made with animal hair, and paints are still made with the same or similar materials as in the renaissance.
