ENGLISH TEA DRINKING
"Twinings Loose Tea and Tea Bags, Tea Pots Too"
It has been a good many years now that I have been
drinking tea.  In fact, tea drinking has almost eclipsed my
drinking of soda pop.  Now, I drink only about one can of
Pepsi each day, maybe two in hot weather.  I remember
English friends asking me how I could stand to drink a cold
drink, they preferring hot tea.  Now, I understand them.
Possibly, this it is this same preference that allows them to
drink warm beer...
English Breakfast is the tea I like best, and I always
purchase loose tea.  I love it for breakfast with eggs, bacon,
and toast with orange marmalade.  I learned this habit by
staying in English country hotels.  I like a marmalade made by Fortnum & Mason
called Sir Nigel's "Vintage Thick Cut," as it is full of delicious bits of bitter peel.  If
you aren't used to making tea, and you want to get started with loose tea, I will tell
you how to make a great pot of tea...
Boil fresh water.  Scald the tea pot, by filling it with boiling water and then
dumping it out.  I must admit that I often use the hottest water from the tap to
"scald" the pot just as the water is coming to boil on the stove for the tea.  After the
pot is scalded, put two or more teaspoons of tea leaves in the pot.  The recipes say
one for each person and one for the pot.  If I am going to drink three or four cups
over breakfast, I normally use just two teaspoons.  Then, pour boiling water directly
on the tea.  This is very important.  Wait a couple of minutes.  Five is standard, but I
usually can't wait that long.  Then stir and serve.  Some people like lemon, but I like
sugar and milk.  I especially like a product called raw sugar from Hawaii.  You
usually find something similar to this in sugar bowls in England.  I put the sugar in
the cup and then pour in the hot tea, but I don't think that is a rule or anything.
If you make tea this way with loose tea, there will be loose tea in the pot, and a
little of it will get in your cup.  "So what!" I say.  In the old days, there was always
someone around to tell your fortune by "reading" the tea leaves in the bottom of your
cup.  Which brings up a point--if you drink your tea in a leisurely fashion, you
won't get many tea leaves in your mouth, as they settle to the bottom of the pot and
the cup.  If you object to having tea leaves in your cup or in your mouth. you can use
a "tea ball," a perforated metal ball into which you put the tea before you pour on the
water, or a tea strainer through which you pour the tea into your cup.  Or, of course,
you can also use tea bags.
